San Nicolás offers modern cuisine which nevertheless displays a number of unmistakeably Andalusian features. “My cuisine is innovative, it’s new Andalusian cuisine based on 100% Andalusian ingredients”.

Quality, technique, innovation…”I attempt always to use Andalusian ingredients as my raw materials, keeping up the tradition, rediscovering old recipes and adapting them to modern times”. If Enrique Martín had to choose one Andalusian product it would be the Iberian pig.

His ultimate ambition is to win a Michelin Star, and he knows that “everything comes to those who do their work well. My main concern is that my customer should be happy”. For Enrique cooking is vocational. Items never lacking in his kitchen include his chef’s torch and spices of Arab origin such as cinnamon and curry…
